How to cook Fried Chicken with Saffron?

- 8 chicken legs
- 1 sprig of rosemary
- 1 sprig of sage
- 2 bay leaves
- 1 sachet of saffron
- extra virgin olive oil
- Salt and Pepper To Taste
- FOR THE BATTER:
- 200 g. made with flour
- 2 eggs
- light beer to taste
- ½ sachet of saffron
- to garnish ½ red pepper, ½ yellow pepper, and fresh oregano
Preparation
- Wash the chicken legs and dry them with kitchen paper. Put them in a non-stick pan, add salt, add the aromatic herbs and cook them over medium heat for 5 minutes, turning them often.
- Remove the herbs, add 1 sachet of saffron dissolved in a tablespoon of hot water and continue cooking until the sauce is reduced. Remove the thighs from the pan, dry them with kitchen paper and let them cool.
- Meanwhile, put the sifted flour with beaten eggs in a bowl, add the ½ sachet of saffron and mix with a fork. Dilute with beer until you get a fluid consistency.
- Heat the oil in a pan; before dipping the thighs in the batter, cut them with a pointed knife, forming some small cuts. Fry for 10 minutes, then lay on kitchen paper and sprinkle with salt and pepper.
- Serve garnished with julienned peppers and fresh oregano leaves.
