Use of Saffron in food

FRUIT COMPOTE WITH SAFFRON

Ingredients

  • 1 orange
  • 150 g. of strawberries
  • 100 g. of blackberries
  • 75 g. of sugar
  • ½ glass of white wine
  • 250 g. of milk
  • 20 g. of white flour
  • 2 egg yolks
  • 1 sachet of saffron

Preparation

  1. Squeeze an orange, put the juice in a pan with 2 tablespoons of sugar and the wine. Cook until the syrup has shrunk. In a bowl, with a whisk, whip the egg yolks with the remaining sugar and add the flour, making sure that no lumps form.
  2. Dilute the saffron with the hot milk and pour into the mixture; bring it to a boil over low heat for about 10 minutes. Let it cool down. Add the orange syrup and divide the cream into four bowls. Serve cold garnished with strawberries and blackberries.
